Bignose and Beardy make cider the old way. like generations of sussex folk before, they use the apples available to them locally, gathering unwanted fruit, pressing it, then allowing it to wild-ferment. the ciders mature slowly, allowing all sorts of interesting flavours to develop—something only time can produce.
